EGG, KALE AND BACON BITES
Ingredients:
8 oz package organic uncured bacon
2 cups chopped kale (or spinach)
½ cup parmesan
½ cup shredded mozzarella
1 TBSP olive oil
8 eggs beaten
Salt and pepper to taste
Cook bacon according to instructions (I like to bake for less mess)
While bacon cooks, heat olive oil in a skillet- add spinach or kale and sauté for about 5 minutes until soft. Season with salt and pepper.
Line a muffin tin with 12 parchment liners
Add the vegetables in equal amounts to the bottom of the muffin tins. When bacon is ready, chop or crumble, and add to vegetable mixture
Whisk together eggs, ½ tsp salt, pepper to taste, and add the cheese. Fill the muffin tins about ¾ of the way with the egg and bake in the oven at 350 degrees for 12-15 minutes until the eggs are set.
