HERBY BAKED CHICKEN
Ingredients:
4 large bone-in chicken breasts or (2 breasts/2 leg/thigh combo)
3 TBSP olive oil
2 lemons
3 cloves minced garlic
3 tsp dried mixed herbs of choice (rosemary, sage, thyme, oregano)
Kosher salt
Black Pepper
Preheat oven to 350 degrees.
Rinse chicken, pat dry, and arrange in a single layer in a 9 x 13 baking dish skin side up. Sprinkle generously with kosher salt and black pepper.
In a small bowl, mix olive oil, garlic, dried spices and zest + juice of 1 lemon. Stir to combine.
Brush the mixture all over the chicken, using it all. Cut the 2nd lemon into 6 wedges and arrange them around & under the chicken.
Place in the oven and bake for 35-45 minutes or until instant-read thermometer reaches 165 degrees F. Option to broil for the last 2 minutes for extra crispiness.
Remove from oven, cover with foil and allow to rest 5-10 minutes. Sprinkle with additional fresh herbs if desired or squeeze of lemon.
