SWEET & SMOKY SPICED ROASTED NUTS

Ingredients:

  • 1 cup raw unsalted cashews

  • 1 cup raw unsalted walnuts

  • 1 tbsp olive oil

  • 1/2 tbsp maple syrup

  • 1 tsp smoked paprika

  • 1 tsp curry powder

  • 1 tsp brown sugar

  • 1/2 tsp garlic powder

  • 1/2 tsp kosher salt

Preheat oven to 325 degrees and line a baking sheet with parchment paper.

Add cashews and walnuts to baking sheet and bake for 5 minutes.

In the meantime, add oil and maple syrup to a medium mixing bowl and whisk thoroughly to combine.

Remove toasted cashews from the oven and add to the oil/maple syrup mixture. Toss with a spatula until nuts are fully coated. Then add smoked paprika, curry powder, brown sugar, garlic powder and salt - toss thoroughly to combine.

Add back to baking sheet and bake for another 8-12 minutes - until golden brown. Cool for about 5 mins- while still warm option to sprinkle with some flakey sea salt if desired.

Note- Leftovers can be stored for 2-3 weeks in an airtight container, though best within the first week.
