TURMERIC ROASTED CAULIFLOWER W/ PUMPKIN SEEDS & TAHINI DRESSING

Ingredients:

  • 1 large head cauliflower, cut into florets (about 6 heaping cups)

  • 3 TBSP olive oil

  • 1 tsp ground turmeric

  • ½ tsp black pepper

  • 1 tsp smoked paprika

  • 1 tsp kosher salt

  • 1 TBSP soy sauce

  • 1 TBSP honey

  • 1/4 cup raw or roasted pumpkin seeds

    TAHINI DRESSING:

  • ½ cup tahini

  • 1/3 cup olive oil

  • 3 TBSP lemon juice

  • 2 tsp Dijon mustard

  • 1 TBSP honey

  • 1 tsp salt

  • 4 TBSP cold water (add more for thinner consistency)

Preheat oven to 425°.  Add cauliflower florets to a large bowl.  In a small bowl, combine olive oil, turmeric, black pepper, smoked paprika, and salt; stir to combine.

Pour the oil/spice mixture into the large bowl and use a spatula to toss florets until thoroughly coated.

Spread cauliflower on large parchment lined baking sheet, spacing out enough so there is no overlap. Roast for 20 minutes.  While cauliflower roasts, whisk together soy sauce and honey.

Remove cauliflower from oven and drizzle soy sauce mixture over the top; toss to coat. Place cauliflower back in the oven for another 10 minutes.

Sprinkle pumpkin seeds on top and enjoy as is or drizzle with Tahini Dressing.

For Tahini Dressing – combine all ingredients in a medium bowl and whisk together. Adding more/less water for desired consistency.  Enjoy!
